Apricot Energy Bites

Energy bites are a great snack that my whole family enjoys! They’re so easy to make and store well in the fridge for a couple weeks. Apricot Energy Bites

These apricot energy bites are a go-to snack for our family! The fresh orange, coconut, and apricot flavors make for a light and refreshing twist on energy bites!

Ingredients

  • 3/4 cup apricots
  • 1/4 cup hemp seeds
  • 1/4 cup shredded unsweetened coconut
  • 1/2 cup cashew butter
  • 1/4 tsp orange zest
  • 1 Tbsp fresh orange juice
  • Pinch of salt

Instructions

  1. Add the apricots, cashew butter, hemp seeds, coconut, and orange zest to the bowl of a food processor.
  2. Pulse in the food processor until a sticky dough start to form (you may need to stop and scrape the sides part way through).
  3. Add the salt and orange juice and blend to combine.
  4. Scoop (I used a 1.5 Tbsp scoop) and roll into balls.
  5. Roll the energy bites in unsweetened coconut (optionally, you can toast the coconut).
  6. Store in the refrigerator in an airtight container.

Notes

Note: the dough should be a little sticky and easily roll into a ball. If it’s too dry add orange juice half a teaspoon at a time and if it’s too sticky, blend in a coconut shreds 1 Tbsp at a time until it reaches a good consistency that holds together.
