Cashew Coconut Granola

This Cashew Coconut Granola is my all-time favorite granola recipe! It comes out perfectly clustery and with just the right amount of sweetness. I enjoy it with fruit and either yogurt, chia pudding, or milk. This recipe is also very versatile: you can easily swap out the cashews, pumpkin seeds, and hemp seeds that are in this recipe with your favorite nuts or seeds (such as walnuts, pecans, almonds, flax, sunflower seeds, etc). And sometimes, I jazz it up with chocolate chunks, freeze-dried strawberries, or dried cranberries after it cools. I hope you enjoy the recipe! This granola recipe comes out perfectly clustery! It's delicious with yogurt or milk! It's also versatile - you can easily switch out the nuts and seeds for any nuts and seeds of your choosing and jazz it up at the end with dried fruit or chocolate chunks.

Ingredients

  • 2 cups rolled oats
  • 1 cup unsweetened coconut flakes
  • 1/2 cup raw cashews, roughly chopped
  • 1/4 cup hemp seeds
  • 1/4 cup pumpkin seeds
  • 1 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 cup coconut oil, melted
  • 1/2 cup maple syrup
  • 1 tsp vanilla extract
  • Optionally, after baking and cooling granola, add any combination of dried or freeze dried fruit and/or chocolate chunks

Instructions

  1. Preheat the oven to 275° F.
  2. Mix all ingredients in a bowl until well combined.
  3. Pour onto a baking sheet and spread into an even layer (for easy cleanup line your baking sheet with parchment paper).
  4. Bake for 1 hour.
  5. Remove from oven and toss mixture around.
  6. Turn oven temperature up to 350° F.
  7. Return granola to oven and bake for another 10 minutes until lightly browned.
  8. Allow to cool completely. Once cooled break up any large pieces.
  9. Optionally, you can add dried or freeze dried fruit (like dried cranberries or freeze dried strawberries) and/or chocolate chunks.

Notes

  • Cashews can be substituted with walnuts, almonds, pecans, etc.
  • Hemp and pumpkin seeds can be substituted with flax, sesame, sunflower seeds, etc.
  • This stores well in an airtight container for 3-6 months.
